Living in Texas comes with lots of perks, my favorite being amazing mexican food always at your fingertips. My spot is Pappasitos and all the margaritas, salsa, chips, garlic butter sauce, and tortillas that come with a Tex-Mex experience. The only downside to delicious mexican grub is the post-consumption food coma that follows.
Instead, trade in the tightened belt and lightened wallet for my version which has all the flavor without the carbohydrate fluff. I'm not claiming this is super healthy, its just a better option with a few minor tweaks. Don't be scared of butter people...it is not going to make you fat in moderation but excess chips and tortillas will for sure.
STEP 1. Throw the marinated Chicken Strips or breast on the grill
Make you a "Skinny Boy" as my husband calls them...
grab a large wine glass
1 shot of patron (or other nice agave tequilla)
1/2 a large fresh lime squeezed into patron
Lots of ice
Top with Pellegrino and mix well
Garnish with additional lime wedge
STEP 2. Homemade Guacamole
2 avocados
Handful of diced cilantro
1/4 small purple onion chopped
2 garlic cloves minced
Squeeze of a lemon
2 tablespoons of sour cream
Pinch of salt and pepper to taste
(put in fridge till ready to serve)
STEP 3. Slice Onion, dice jalapeño, and garlic
Throw some butter In a skillet and Sautée away
(put in oven on warm till serving time)
Grate high quality cheddar cheese and set aside for later
STEP 4. "Pappasitos Garlic Butter" with cilantro
3 small cloves of Garlic diced
1/4 cup of cilantro
4 tablespoons of butter
Heat in skillet on medium to low for 6 minutes then pour in small bowl for serving
STEP 5: Put your grilled chicken on your plate, top with the sautéed onion mix, scoop a big heap of guacamole on the plate, top chicken with cheese then the infused garlic butter and enjoy.
Ok, ok. I know there is a lot of garlic in this dinner but you can tailor to your liking. Once you finish eating you will feel satisfied and happy, especially because you avoided the margaritas, chips and tortillas. Viva la low carb!
